Textfile erzeugen als UTF-8

Mit diesem Code erzeuge ich eine Text-Datei. Der Code stammt nicht von mir, sondern wurde irgendwo in den untiefen des Netzes gefunden.

Leider ist die generierte Text-Datei UTF-16 kodiert, ich brauche aber UTF-8.

Wie kriege ich das hin?
